Fermentation Symposium is the culmination of a year-long NEA supported exploratory process that melds the aesthetics of food with the aesthetics of live performances.  The result is a multi-sensual performance ritual in the round combining the consumption of food and art to evoke the aesthetic quality yugen – an indescribable beauty that is perceived with our deepest senses.

The collaboration brings together Theatre of Yugen Artistic Director Nick Ishimaru, U.S./Japan Cultural Trade Network’s Kyoko Yoshida, AEDAN Fermented Foods chefs Mariko Grady and Eri Shimizu, Professor of Plant Pathology at the University of Minnesota St. Paul  and expert in microbial education Dr. Carol A. Ishimaru, founders of the Bay Area-based contemporary dance company Sharp & Fine, sisters Megan and Shannon Kurashige, and founder and Artistic Director of inkBoat dance company Shinichi Iova-Koga.

Each of the artistic partners found something inspirational in a dish being served during the evening and, channeled through their artistry, created a performance that blends culinary inspiration with performative execution.  The result is a communal performance-dining experience unlike any other.
